Pizza Night

Pizza is one of those foods where you can make it as formal or informal as you like. It works for sports games, nights you want to stay in, or even Valentine’s Day!

It’s tough to find a good solid gluten free pizza. Though some restaurants offer a gluten-free crust, the concern of cross-contamination is prevalent. If it’s a delivery place, those folks are super busy packing and delivering. They may not necessarily have time to take necessary precautions or provide appropriate resources for staff training.

Shay’s Way

  • Your choice of pizza crust (we used Boboli)
  • Pizza/tomato sauce (I used Clasico’s Roasted Garlic and Herb)
  • Pepperoni slices
  • Bacon bits
  • Jalapeno slices
  • Sliced bell pepper
  • Green olives
  • Pieces of torn kale
  • Mozzarella cheese
  • Parmesan cheese (to garnish)
  • Crushed red pepper (to garnish)
  • Parsley (to garnish)

Spread your sauce on your crust. Add your desired toppings. Bake accordingly to the directions on your crust. Garnish with parmesan, red pepper, or parsley.

Shan’s Plan:

  • Gluten Free Crust
  • Pesto (I used Trader Joe’s Vegan Pesto)
  • Sliced bell pepper
  • Pieces of torn kale
  • Garlic
  • Sweet potato slices
  • Ranch dressing to garnish (I used Daiya’s Homestyle Ranch dressing)
  • Parsley and nutritional yeast, to garnish

If you use this crust, it involves making the dough and letting it rise. This crust is not vegan (contains egg) but the package gives directions for an egg substitute. Per package directions, I also baked the crust for about 7 minutes before adding the pesto and toppings. After that, I baked the pizza for about 15 additional minutes.

*Note: since I used veggies and they tend to shrink up while cooking (especially the kale), I would be very liberal when initially placing the toppings. You can’t have too many toppings on a pizza 🙂

For Whole 30/Paleo folks, I would use a cauliflower/zucchini crust and top with your choice of meats and vegetables. Be mindful of the sugar in the tomato sauce that you use 🙂
