Hi everyone! Hope you all have had a refreshing weekend. We have been working hard on some home renovations so on Saturday evening, a quick meal was in order. We do a lot of breakfast for dinner because it’s practical, easy, and filling.
I gave Shay the option of having breakfast burritos or quesadillas. To my surprise, he not only expressed wanting quesadillas but he wanted them made with corn tortillas!! Big jaw dropping moment for me!
Shay’s Way is a sausage/egg/cheese quesadilla while mine is potato/egg. I tried to put salsa in mine while cooking it. I don’t recommend this. Soggy soggy soggy!
- Corn tortillas
- 1 lb breakfast sausage
- 5-6 eggs
- About ⅓ cup of milk
- Shredded cheese
- Salt and pepper
- Butter (for heating in the skillet)
- Breakfast potatoes
- Hot sauce and jalapenos to garnish
- Fruit on the side
For Shay’s quesadillas, I browned and crumbled the sausage in the skillet, drained the grease, and set aside. In a bowl, I whisked the eggs, milk, salt, and pepper together before scrambling them in the skillet. I melted a little butter in a smaller skillet and built the quesadilla with the crumbled sausage, eggs, and cheese. I let the tortillas get a little bit brown on both sides but made sure the cheese had melted.
For me, I put eggs and the cooked breakfast potatoes on the tortillas as I warmed them in the skillet. I attempted to put a little salsa in there but the tortillas are delicate and will tear. Next time, I may add some refried beans so it acts as a “paste” for the eggs and potatoes. I would recommend using large tortillas for quesadillas so they don’t break as easily. You really can make do with any size but next time, I’m going to get the biggest ones I can find!!!
