My Big Fat Greek Layered Dip

Morning Everyone!

I have a fun little spring/summer recipe to share with you today.

If you know me, I am a big connoisseur of the infamous seven layer dip. I thought I would try to make a different version of this dish with Greek/Mediterranean influences. It’s super easy to make! This version made enough for an 8 inch pie dish. Consider doubling if you use a 9×13 pan.

My Big Fat Greek Layered Dip

  • 1 cup hummus
  • Tzatziki sauce
  • ⅓ cup finely diced tomato
  • ⅓ cup finely diced cucumber
  • ⅓ cup finely diced purple onion
  • ½ lemon
  • 1 tsp minced garlic
  • Salt and pepper to taste
  • Feta cheese
  • Several Kalamata olives chopped

Tzatziki sauce:

  • ½ cup nonfat greek yogurt (or your choice of vegan yogurt)
  • ⅓ cup grated cucumber (make sure you blot all the excess water after grating)
  • 2 lemon slices
  • 1 tsp minced garlic
  • Dill, salt, and pepper to taste

Combine yogurt, cucumber, lemon, garlic, and seasonings together.

First, spread hummus onto the bottom of your dish. Then, layer tzatziki sauce on top. Next, combine tomato, cucumber, and onion in a small bowl and add lemon, garlic, salt, and pepper. Sprinkle veggies next along with crumbled feta and the chopped olives. Lastly, chill and serve with your choice of pita chips, multi-grain crackers, or pretzels. We used these crackers. You can also scoop some of this dip onto a bed of lettuce and serve with grilled chicken or fish. Yum yum!

For my version, I only sprinkled feta cheese on Shay’s side on the plate. I’m not crazy about feta to be honest. Or olives. I’ll get there someday!

In conclusion, I wanted to share this picture of Stetson! He wanted a taste so bad! With a little encouragement, he was really well behaved and was content to lay near the table as I took pictures.
