Straight Up Ugly Dip/Salad
So today’s recipe was actually plan C. Plan A and B will come another day. In light of it all, I think you will enjoy today’s recipe. It is sort of along the lines of Cinco de Mayo. I realize I’m stretching it here!!
Judy, my cousin first made this dip for a family July 4th party last summer. We all camped out near the dish and ate it until our hearts and tummies were content. When she told me the name of the dip was “ugly dip,” I thought she was joking. Turns out, she was for real! Don’t let the looks of the dip fool you. You will LOVE it!

Shay’s Way is the dip itself with lots of tortilla chips. My version is using the dip in a delicious salad with strawberries and avocados. I may have also snuck a few chips on the side!
Straight Up Ugly Dip (doubled)
2 15 oz can black beans drained and rinsed
2 15 oz cans of corn drained and rinsed*
1 bunch of green onions, chopped
1 bell pepper (I used green but red looks really pretty!)
1 4 oz. package of feta cheese (crumbled well)
Several dashes of chili powder and cumin
½ cup apple cider vinegar
½ cup white sugar
½ cup olive oil
Combine beans, corn, onions, bell pepper, seasonings, and cheese in a large bowl. Stir liquids together in a small bowl before pouring over the other ingredients. Chill for several hours before serving or make and chill the night before. Enjoy with tortilla chips or Fritos.
Note: The original recipe called for an 11 ounce can of Mexicorn. I wasn’t able to buy one so I just used regular corn with a few seasonings. Easy peasy substitute. You can also omit the feta to make this dairy free.
½ cup of the Straight Up Ugly Dip
On a bed of lettuce/spinach/kale, add your dip, strawberries, and avocado.
