Eggtremely Spicy Muffins/V-egg-ie Muffins

Happy post May 4th and Cinco de Mayo everyone!

I spent way too much time trying to think of a corny title for today’s recipes. The given titles are the best that I’ve got.

With Mother’s Day around the corner, I thought it would be fun to share a brunch recipe. Hands down, I can tell you my mom would probably want Shay’s version of the muffins.

These egg muffins are low carb and so easy to change up for different tastebuds! Shay’s Way features no veggies but you could easily remedy this.. You could also substitute sausage for ham or bacon or throw in some onion. My egg muffins are dairy free with three kinds of veggies but you could always using a meat substitute if you want.

Eggtremely Spicy Muffins (Shay’s Way)

  • 1 pound hot breakfast sausage (we used Owen’s)
  • 8 eggs
  • About ½ cup milk
  • 1 cup freshly grated sharp cheddar cheese
  • Salt and pepper
  • Several dashes of Cholula hot sauce
  • Optional: chopped jalapeños

Brown your sausage, crumble, and drain. In a large bowl, crack your eggs, add your milk, hot sauce, cheese, seasonings, and sausage. Stir until well combined. Grease a muffin pan and preheat your oven to 350. Fill about ⅔ full. I used a large muffin pan for this since my other pan was being used but you can also use a regular sized muffin pan. Bake for 25-30 minutes or until a toothpick comes out and you don’t see any “jiggles.” I let the muffins cool for about 10 minutes before popping them onto a plate and blotting them gently with a paper towel.

V-egg-ie Muffins (Shan’s Plan)

  • 6 eggs
  • ½ cup unsweetened almond milk
  • 2 medium Roma tomatoes, finely chopped
  • 1 cup spinach/kale chopped
  • 1 bell pepper
  • Salt and pepper
  • Garlic
  • About 1 to 1 ½ tbsp nutritional yeast
  • Optional: vegan shredded cheese (about 3/4 cup)

In a skillet, saute your veggies with some garlic. Once tender, set aside. Quickly stir the eggs, milk, and cooked veggies together. Add salt, pepper, and nutritional yeast. Grease a muffin pan and preheat your oven to 350. Fill about ⅔ of the way full. Bake for about 25-30 or until the muffins are set. This recipe yielded about 10 muffins but that can be easily fixed. Add extra eggs and a little more veggies!
