Broccoli Rice Casserole
So sorry I didn’t post on Friday. I was sick during the week so really the only favorites I had were Kleenex and orange juice. Ick!
Over the weekend, I felt more like my normal self and decided to get ahead on some Thanksgiving meal prep. There are a couple of Shay/Shannon friendly Thanksgiving dishes that I will make ahead, freeze, and have on Thanksgiving day.
Broccoli rice casserole is a family favorite of mine and my cousin Judy always brings it for our family Thanksgiving and Christmas lunches. Her casserole will ALWAYS taste better than me. She really knows how to cook!
Thankfully, this recipe was quite simple to adapt for us. The only real difference is that I use a different type of cheese sauce. Cheese Whiz has corn syrup in it so we have been using Tostitos queso sauce in the chip aisle. It definitely adds a kick but in a good way!
Broccoli Rice Casserole (Shay and Shan’s shared casserole)
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery (can omit if you want)
- 1-2 tsp minced garlic
- Extra virgin olive oil
- 1 package of frozen broccoli
- 3-4 cups of cooked white rice
- 1 jar of Cheese Whiz (we used 1 15 oz jar of queso sauce)
- 1 can cream of chicken or mushroom soup (we used a gluten free cream of mushroom soup)
- Shredded sharp cheddar cheese
- Salt and pepper to taste
Saute onion, celery, and garlic in a skillet in some extra virgin olive oil. Add in the queso and cream of mushroom/chicken soup. Stir it all together. While this is cooking, cook the broccoli in the microwave according to package directions. Once the broccoli finished in the microwave, I chopped up the broccoli into smaller pieces. Add the broccoli to the cheese mixture and then mix well with the rice. Spray a 9×13 pan with cooking spray and pour the cheesy rice mixture into the pan. Top with shredded cheese. Cook at 325 degrees for about 25-30 minutes or until throughly heated through.
Simply delicious!! I was able to successfully divide up the casserole for Thanksgiving and Christmas but not after Shay and I each had a very healthy portion!
